The Blonde Leading the Blithe

A while back, I was heading to have Saturday brunch with a girlfriend and we had a "getting ready drink" while we caught up on the week. That's pretty much our adult version of the old college "pregaming" days. The drink was a delicious twist on a mimosa that nixed the orange juice and replaced it with Elderflower liqueur.  Ever since that beautiful introduction, I haven't looked at a classic mimosa the same. The Blonde Leading the Blithe is a Proseco based cocktail with St. Germain Elderflower Liqueur, fresh rosemary and a lemon twist. It's easy to drink, refreshing and full of flavor. It's great with brunch, lounging by the pool or really any other occasion you're craving some bubbles. I used La Marca prosecco but you can use whatever prosecco you enjoy. 

The two cocktails photographed I just shared with my neighbor. She and I don't really have the same taste in wine- I'm all about a bold full bodied Cabernet and she loves a sweet Riesling but we have one thing in common- we both LOVE this cocktail. She had to drive her kids to church so she sent me a text message after she departed with her review. 

"The rosemary awoke my senses and the elderberry had a pleasant after note." 

I'm glad I cut her off after one since she is clearly combing Elderflower and Juniper berry. I'm also quite certain she thought this was a gin drink. 

INGREDIENTS:

Prosecco

Elderflower liqueur

Fresh rosemary

Lemon

RECIPE:

Fill your glass with chilled prosecco, add a splash of elderflower liqueur, garnish with a fresh rosemary sprig and a lemon twist (use a knife or vegetable peeler). Enjoy!
