Grilled Peach and Proscuitto Salad

Growing up I was never a fan of peaches. Mainly because when my older brother, Tommy, was starting to get armpit hair my mom kept calling it "peach fuzz" and I just got extremely grossed out thinking peaches were anything like my brothers armpit hair. Fast forward to adulthood, I've overcome my fear of peaches and am now pretty obsessed with them. If you haven't tried grilled peaches you are missing out. This salad has the perfect balance of sweet and savory with a nice peppery bite from the arugula. I always try to figure out how to incorporate fruit into my salads because I like a bit of sweetness. Enjoy! 

Ingredients:  

1 peach

3 slices proscuitto

Arugula

Fresh Mozzarella 

Balsamic Glaze (store bought) 

Pecans 

Olive Oil

Recipe:

Turn your grill on (if you don't have a grill, use a grill pan on your stove top.) Remove the pit of your peach and cut and brush each cut side with olive oil. Grill cut side down over medium heat for 4-5 minutes. While the peach is grilling, get your salad together with a few pieces of proscuitto, mozzarella and chopped pecans. Once the peach is done grilling, slice the halves and place on top of your salad. Drizzle the balsamic glaze on top and enjoy!
