Sage and Mustard Baked Chicken

When I was younger I was a child with a simple palate that frequented chicken tenders and honey mustard on more than a weekly basis. Don’t get me wrong, I still love a delicious basket of fried chicken dipped in sweet yellow goo as much as the next kid, but as I’ve gotten older I’ve noticed my hips don’t enjoy them as much as I do. This is my adult version which tends to be visually and mentally classier and more mature than my childhood fave. I even throw some sage in to make it look pretty and seem fancy. This dish takes about an hour total.


INGREDIENTS:

One package chicken thighs, one package chicken drumsticks (skin on, bone in)

1/2 stick of butter

3 tbsp dijon mustard

3 tbsp maple syrup

Fresh sage

Salt & Pepper


DIRECTIONS:

Rinse your chicken and place in a large baking dish. Salt and pepper your chicken. Melt the butter in a microwave safe dish then add the mustard, sage and maple syrup and mix it together. Coat the chicken with the sauce mixture. Bake on 350 for 50 minutes then Broil on HI for 5 minutes to get the skin nice and crispy.

I like to serve this with a potato and a green vegetable of choice- tonight I did sautéed garlic spinach. Enjoy!
