Tommy's Green Bean Almondine

As some of you may know, I lost my older brother, Tommy, suddenly in June 2018. He was a naturally talented self taught chef and did it professionally for a long time. He could create some seriously killer dishes and make a five course meal out of random ingredients in the fridge and pantry that would come out gourmet. One of our favorite things to do together was cook. Or rather, he would cook and I would watch and drink wine and steal his secrets and recipes. One of our last conversations was about doing a recipe together for this very blog and I was going to interview him about his time as a chef. This is one of my favorite side dishes he taught me. It’s filled with garlic and parmesan and roasted to perfection. It’s a weekly staple in my house and my friends and family always request it now. I love to serve this with chicken or salmon piccata. INGREDIENTS:

Package of precut green beans

1 tbsp minced garlic

Olive Oil

Grated parmesan cheese

Juice of half a lemon

Slivered Almonds

Salt & Pepper


Directions:

Preheat oven to 375 degrees. Grab a baking dish and place your green beans in it. Drizzle with olive oil, add the garlic, salt, pepper, lemon and parmesan cheese and toss together to coat the green beans with the mixture. Top with slivered almonds. Place the dish in the oven and bake for 30 minutes. Once the dish is all cooked, squeeze lemon juice on top and serve. Enjoy!
