Grilled Steak and Veggie Kebabs

If there is one thing I love about Spring time... it's taking advantage of grilling out by the pool. There really is just nothing like popping open a nice chilled bottle of crisp Sauvignon Blanc (or Sauvy-B as my friend Ellie and I like to call it) and cooking dinner on the grill. I was very fortunate to grow up with a dad who really should have been a chef. Every Sunday we had family dinners and the amazing aroma of the charcoal grill would fill the the backyard. One of my absolute favorite easy dinners to cook are kebabs. I will make a kebab out of almost anything. Shrimp, steak, chicken, salmon, veggie- you name it. Sometimes I'll do a Greek marinade and serve them with tzatziki sauce, or I'll do a soy sauce marinade and throw pineapple on the skewers. There really are endless options for kebabs. This specific recipe is steak marinated in Italian dressing then thrown on skewers with peppers, onions and yellow squash. Super simple and delicious! I always change up what I serve on the side with it. If I'm trying to be good, I'll do a side salad, if I'm really hungry I'll do a potato or other starch. This time I did a side of basic store bought rice pilaf- just follow the instructions on the box. 

Ingredients:

2-3 sirloin filets

One red pepper

One yellow pepper

One yellow squash

One onion

Olive Oil

Garlic salt

Pepper

Italian salad dressing

*Fresh Rosemary for garnish

Recipe:

Cut the steak into cubes and marinate in Italian dressing for at least 30 mins (the longer you marinate the better). Turn your grill on to about 400 degrees. While the grill is getting hot, chop the vegetables into thick chunks and toss in olive oil, garlic salt and pepper. Skewer them up with the steak and veggies. Toss the kebabs on the grill for about 3 minutes per side. Crack open a beer or pour a glass of wine while the food cooks! Take the kebabs off the grill and sprinkle with some fresh rosemary. Easy as that, enjoy!
